FairShare recipe test: Sassy zucchini

Zucchini prepZucchini! There's always too much of it. But you can put it in anything; this recipe was a good reminder.

Cut up a couple big zucchini. Discard seeds, maybe peel some strips of skin off if you're not big on bitter. The recipe called for a pint of quartered cherry tomatoes and a quarter cup of hot salsa, but any combo of tomato products will work.

Saute the zucchini pieces and tomato stuff in butter until tender, and top with feta cheese. Any cheese, actually. Nom.
